I gave it a go - grid was tough - I ended up revealing 50%+ after 30 minutes and no joy on the meta. I thought I saw something while solving but I nothing else seems to support what I saw.

I love new contributors, but when a first puzzle seems very hard at best, it's difficult to commit time to it, not yet trusting the constructor.

Did the grid of the "thing" and have several key words and/or concepts that relate, but haven't been able to assemble them into a distinct musical instrument yet. Sleeping on it ---

I had a solid answer for the instrument; now I see it is a woodwind. Pretty sure I have it but I like my original answer as well.

Well I guess I can stop looking for my old instrument, the trombone. I saw BONE in the middle entry and was off on the rabbit hunt.

Yeah - that the one thing that I saw so once I saw the woodwind thing - I was done.

Solution here:
Inside each of the 15-letter themers is a type of fish (TUNA, BONE, SWORD).
Taking a hint from 1-down, if you look at the taxonomic families of these fish we have:
TUNAFISH -> Scombridae
BONEFISH -> Albulidae
SWORDFISH -> Xiphiidae
Taking the first letters of these gives us SAX, a woodwind instrument.
